Scrummy Yummy Homemade Granola

My darling little brother bought me a cake stand and Leon’s third cook book “Baking & Puddings”...I think he was dropping a massive hint that I should be baking more…so here goes the first attempt at a recipe from my new cookery book.

I love breakfast, it’s pretty much my favourite meal so I thought I’d start with attempting to make my own Granola. I’ve followed the method of the Leon recipe “Our Favourite Granola” but I’ve amended the Ingredients slightly to suit my tastes and you can do the same if you want to try it for yourself!

Ingredients (Makes around 1.6kg)

600g Rolled Oats

50g Sesame Seeds

60g Pumpkin Seeds

60g Sunflower Seeds

50ml Maple Syrup

100ml Sunflower Oil

250ml Runny Honey

50g Dark Brown Sugar

50ml Water

1 1/2 tsp Vanilla Extract

1/2 tsp Ground Cinnamon

A Grating of Fresh Nutmeg

A Pinch of Sea Salt

100g Sultanas

100g Sliced Dried Apricots

50g Dried Cranberries

50g Sliced Dates (I found in Co-op some delish Organic Deglet Nour dates by “Natural Selection”)

50g Dried Figs

Method:

1. Pre-heat the oven to 150c and line a couple of baking trays with greaseproof paper. *TIP* If you screw the greaseproof up in a ball and spread it out again it will make it much more easy to handle and fit into any shaped and depth baking tin or tray.

2. Mix the oats and seeds together in a large bowl and leave to one side. In a saucepan mix together the maple syrup, honey, oil, water and sugar; put this over a not too high heat and whisk well until everything is nicely melted and combined together. *TIP* Before measuring out the sticky honey and syrup, measure the oil out first in a jug. You’ll find the sticky stuff sticks much less with a slight coating of oil in the measuring vessel.

3. Take the mixture from the heat and add the nutmeg, cinnamon and vanilla and stir well and pour into the dry oaty mix, stirring well to make sure everything is nicely covered. Spoon the mixture into the baking trays and spread out evenly, pop in the oven for 1 hour

4. Take the trays out of the oven and turn the mixture over and break it up into chunks with a spoon or spatula, ensure its spread out evenly. Turn the oven down to 140c and bake the granola for another 35ish minutes. Take out of the oven and leave to cool before stirring in the dried fruits.

I just had to add a picture of the fruit, they look like jewels or something…yummy chewy breakfast  jewels!

Keep it stored in an airtight container and it should last for a few weeks at least! It’s super yummy with milk and yoghurt with some fresh fruit!

being a book snob i relish the day when a new set of limited edition cover books are published, finding new pretty covers to adorn my shelves is really quite exciting! (yes i know i am very sad) so when i saw these cuties in Waterstones i practically jumped with joy!

they are from the publishers Weidenfeld & Nicolsons who are this year celebrating their 60th anniversary. to celebrate this they have selected a few designers & artists to create special endpapers for some of their classic novels….

spoilt !

i feel like i have been thoroughly spoilt rotten this year for my birthday! it has really helped with the trauma of turning 25, so i’d like to say a big thankyou to my friends & family for all their lovely messages & cards & gifts!

after sampling some tasty cakes & a pretty successful costume sourcing session in Shoreditch i was wandering down Bishopsgate towards Liverpool st station past the bus stop for the Terrovision & National express coaches & what did i spy but a man laden with suitcases waiting for a coach, tucking into an entire trifle…..yes a trifle not a sandwich or a burger or a muffin or a wrap or a salad to fill that hungry hole…a entire sherry trifle (from M&S i should imagine) !!!

anyway so i also wandered past this little cutie for sale…anyone have £1,200 spare?

and i also picked up this collection of short stories in the Banardos on the high street. it’s “Birthday Stories” by Haruki Murakami one of my very favourite writers. the stories are all by different writers & based, not surprisingly on Birthdays! i’ve recently gotten into short stories, they are ideal to immerse yourself in on the commutes to work.

i’ve been a bit slack on the post front this week i’m afraid….been a busy bee buzzing about.

i’m going to see Emiliana Torrini tonight with my two favourite people beginning with T. she’s the most loveliest singer!

then tomorrow i am off to sunny (hopefully) Brizzle for a bit of a mini reunion with some friends from college, who collectively are married/pregnant/buying houses & basically doing all the things i am not….not that i’m rushing into becoming any of those things, it all seems a bit grown up & responsible for me. it’ll be fab to see them!!!

Also i am currently reading “I love you when I’m drunk” by Empar Moliner. a series of very funny & very honest short stories based on very everyday situations

my birthday date (remember it well)and that of Frida Kalho one of my most adored artisits….her paintings are so full of emotion, painfully & sometimes disturbingly autobiographical. the 2002 film “Frida” directed by Julie Taymor and starring Salma Hayek, is a film i can watch over & over again.

after much deliberation myself & my equally ranty/angry flatmate have discovered the essentials for finding love based on Jane Austin….

1. floaty dress

2. above floaty dress must be low-cut for lots of heaving bosom to entice your love

3. flat shoes

4. number 3 is essential as number 4 is to RUN everywhere in floaty dress, thus causing increased bosom heaving

5. ringlets / curly hair in general, usually styled in elaborate manner to be ruined in sudden rain storm etc, prime opportunity for meeting soul mate

6. embroidery! this causes men to fall in love with you as you stitch by the fire

7. sitting very upright all the time

8. emotion filled correspondence, replies to which must be read and clasped to heaving bosom in aching devotion

9. painfully embarrassing bustling family member determined to have you married off to the first person who sets eyes on you

10. more running in floaty dresses

Don’t get me wrong i absolutely love Jane Austen books, (Jane Austen week on ITV3 is just toooo exciting) i read them over and over again till they are dog eared and the spines are borken and i will endlessly watch the tv and film adaptions….but seriously did they ever live happliy ever after like ms.austen makes out?

- i must note that i was almost moved to physical sickness, as was my flatmate, by the pure over the top utter happiness that Fanny & Edmund have discovered in each other by the end of Mansfield Park, the tv adaption show on itv3 this week -
